Butter-poached lobster is a simple recipe made up of fresh lobster tails cooked in butter, garlic, and tarragon paired with the serving of fresh lemon wedges, and you have a perfect meal for date nights and special occasions.
These delicious lobster tails only require a few ingredients, but are wonderfully tasty.
BUTTER POACHED A LOBSTER TAILS INGREDIENTS
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 Lb unsalted butter, 4 sticks
- 2 TBS fresh garlic, (minced)
- 6 sprigs of fresh tarragon, around 1/4 ounce
- 2 lb any fresh, frozen, and defrosted lobster meat from the tails around 1.5 to 2.5 pounds
- Wine (gringo or Chardonnay)
How to Make Butter Poached Lobster Tails
- Add the wine and butter to a small frying-pan over low flame.
- Once the butter is melted,
- add the garlic, tarragon
- and the lobster tails meat in the butter mixture and cook over low heat.(If you cook it too fast, the lobster releases a white protein substance known as pellicle, which is edible but very unpleasant.)
- Flip the lobster over and cook for 4 to 5 minutes, or until the lobster is bright white and solid but not overcooked.
Time To Serve:
Place lobster tails meat on the serving dish, spoon remaining butter from the pan over the lobster, and garnish with lemon wedges. Season with salt and pepper as desired. You can also add extra wave by including minced parsley as a garnish.
Substitution:
1. If you don’t have tarragon, other mild fragrant herbs like thyme or chives work amazingly in this recipe.
2. We only suggest unsalted butter for this recipe so that you control the salt content.
How to Store:
Once the cool, cover and keep it in the poaching liquid in the refrigerator for 2 to 3 days. You can freeze this covered for up to 3 days. Thaw it in the refrigerator for 1 day before reheating.
How to Reheat:
Add the desired amount of poached lobster and the poaching liquid to a small saucepan. Heat over low heat until hot.
